Easy and Delicious – Wheat-free Mac & Cheese, with Pesto

Pesto Pasta

You can use any kind of pasta you want!

There are few things as comforting as plain old mac & cheese – but when you have to eat gluten-free or wheat free, can you still have this wonderful comfort food?

I’m all about quick and easy with my cooking, and it took me a while but yes, I now have a quick and easy wheat-free Mac & Cheese recipe.  It got even simpler this year when I found Bongard’s Creameries Melting Cheese, which, after previewing the ingredients, I believe to be gluten-free as well as wheat-free.  However, this recipe includes Pesto.  I love my little invention of Pesto Mac&Cheese, but if green Macaroni doesn’t sound that interesting, my feelings won’t be hurt if you don’t use it!  You don’t even have to modify the recipe at all.

Ingredients:

2 cups (or so) wheat or gluten-free macoroni noodles

3/4 lb. Bongard’s Creameries Melting Cheese

1/2 cup milk

2 tbsp. butter

2tbsp. pesto paste

(Optional: salt and pepper, dried tomatoes and fresh parmesan)

Directions: I don’t want to say you can’t screw it up, because every time someone writes that in a recipe I follow, it happens.  However, I will say, that it seems very unlikely that anyone could mess up this easy, peasy recipe.

First, cook the pasta according to the directions on the box. Use whatever pasta you prefer, even regular wheat pasta if you don’t have to follow a special diet.  As for gluten-free or wheat-free pasta, I strongly prefer corn noodles, but everyone seems to like something different.  Don’t overcook your pasta, and you should be ok.

Next, put the melting cheese and the pesto in a bowl big enough to hold all the macaroni.  I don’t break it up or stir it up at this point, although you can.  When the noodles are ready, drain them, and place them right on top of the cheese/pesto combination.  The hot noodles melt the cheese.  Add the butter, and stir until things are all mixed up – then add the milk, and salt and pepper to taste.  A bit of fresh parmesan really makes this a fantastic recipe as well, and for the more adventurous, dried tomatoes add just a bit more flavor!

Quick, easy and delicious – my favorite kind of recipe.
